Pear-Poblano Salsa

Ingredients:


3 medium pears -- ripe but firm, diced

1/2 medium poblano chile -- seeded and diced

1/2 medium red bell pepper -- diced

1/2 medium yellow bell pepper -- diced

1/2 small red onion -- diced

1 teaspoon garlic -- minced

1/2 cup cilantro -- coarsely chopped

1/2 cup fresh lime juice -- or to taste

1/2 teaspoon salt and pepper -- to taste
 

Preparation / Directions:


Combine all the ingredients, mix thoroughly, and set aside in the refrigerator for at least 2 hours. Use within 24 hours. Makes 4 cups. Notes: Here again, the tastier the pear, the better your salsa. Try this with grilled Duck breast.
