Preparation / Directions:Combine all the ingredients, mix thoroughly, and set aside in the refrigerator for at least 2 hours. Use within 24 hours. Makes 3 cups.
Notes: The sugar in this recipe takes the bite off the acidity of the pineapple. You can use less if you are lucky enough to find a truly ripe, sweet pineapple. Serve with fish.
