Plum Tomato Salsa with Sherry Vinegar

Ingredients:


6 Medium Plum tomatoes, peeled, Seeded, and cut into 1/2 inch Dice

1 Medium shallot, sliced thin

1 Medium Serrano chile, seeded and Sliced thin

2 tablespoons Sherry vinegar

1/2 Cup Olive oil

1/2 teaspoon Chopped fresh thyme, or 1/4 ts dried

1 tablespoons Chopped fresh cilantro

1 tablespoons Chopped fresh parsley

1 teaspoon Salt and ground black

1 teaspoon Pepper to taste.
 

Preparation / Directions:


Mix all ingredients together in medium bowl. Serve within 2 hours.
