SALSA DI SPINACI CON UOVA

Ingredients:


120 milliliter Olive oil

50 milliliter Lemon juice

2 Tablespoon Capers

250 grams Spinach leaves, torn roughly

6 bunches Lettuce leaves, torn roughly

1 teaspoon Salt and pepper

1 package Fresh pasta of your choice

2 pieces Sprigs continental parsley
 

Preparation / Directions:


Combine oil, lemon juice, capers, spinach and lettuce in a food processor. Blend until smooth. Season well with salt and pepper. Cook the pasta until *al dente*. Heat spinach puree slightly, being careful not to overcook or burn. Add to well drained pasta and combine. Garnish with parsley.
