Salsa Fresca 1

Ingredients:


1 1/2 pounds tomatoes -- cored, seeded, and diced

1/4 cup onion -- finely chopped

1/4 cup cilantro -- chopped

1 medium jalapeno pepper -- seeded, deveined, and finely chopped

3 tablespoons fresh lime juice

1 teaspoon salt and pepper -- to taste
 

Preparation / Directions:


Mix all ingredients together and let stand at least half an hour before serving. Use within 24 hours. Makes 3 cups. Notes: There are many, many versions of salsa fresca, probably as many versions as there are cooks. We serve salsa fresca with many of our fish and chicken dishes, and it's also delicious by itself with tortilla chip
