Salsa Fresca Con Chipotle |

Ingredients:
1/2 medium Red onion, diced |
3 Cup Fresh tomatoes, diced |
2 Tablespoon Chopped cilantro |
4 medium Chipotle peppers, Hydrated and minced |
1 teaspoon Salt |
1 teaspoon Sugar |
1 medium Juice of one lime |

Preparation / Directions:
Remove seeds and stems from chipotles. Hydrate the dried chipotles by placing
them in enough water to cover. Bring them to a boil, turn off the heat and
let them sit until they cool. After mincing them finely, add all the
ingredients together. Let the salsa sit for at least a half-hour before
serving.
