South-of-the-Border Wraps

Ingredients:


16 ounces kidney beans rinsed and drained

8 ounces whole kernel corn drained

1/4 cup red bell pepper chopped

3/4 cup salsa thick-and-chunky

1 tablespoons cilantro or parsley chopped fresh

4 tortillas flour tortillas (8 to 10 inches in diameter)

1/2 cup Cheddar cheese shredded
 

Preparation / Directions:


1. Mix beans, corn, bell pepper, salsa and cilantro. 2. Spread about 3/4 cup of the bean mixture over each tortillas to within 1 inch of the edge. Sprinkle 2 tablespoons cheese over each tortilla. 3. Fold opposite sides of each tortillas over filling (sides will not met in center.) Roll up tortilla, beginning at one of the open ends. Place wraps, seam sides down, in 9-inch square microwavable dish or dinner plate. 4. Microwave uncovered of High 1 minute; rotate dish 1/4 turn. Microwave 1 minute to 1 minute 30 seconds longer or until hot.
