Beets with Orange Sauce

Ingredients:


1 Cup orange juice

1/3 Cup sugar

2 tablespoons cornstarch

1 tablespoons butter

1/8 teaspoon salt
 

Preparation / Directions:


Use shoestring beets or tiny whole beets Serve with orange sauce Combine sugar, salt and cornstarch, mixing well. Add orange juice and butter and cook five minutes or until thick in top of double boiler. The sauce transmutes the common beet into a dish one eats for pleasure, not for duty.
