Ingredients:


4 Medium chipotle chile

1/4 cup sliced bacon

1/4 cup onion

3 cups tomato concasse

1 cup beef stock

1/4 cup carrot

1/4 cup celery

1/4 cup cilantro

1/2 teaspoon kosher salt

1/4 teaspoon pepper
 

Preparation / Directions:


cover chiles with warm water allow to stand for 60 minutes, drain, and finely mince saute bacon and onions in medium saucepan, over a medium flame, until bacon is crisp add chiles and remaining ingredients-mix well serve hot, warm, or at room temperature
