Greek Cucumber Sauce

Ingredients:


2 medium english cucumber

1 teaspoon kosher salt

1 cup onion

1/2 cup plain yogurt

1 teaspoon fresh lemon juice

1 tablespoon fresh dill weed

1/4 cup fresh spinach

2 tablespoons olive oil

1/8 teaspoon cayenne

1/8 teaspoon salt

1/8 teaspoon black pepper

1 teaspoon fresh oregano
 

Preparation / Directions:


combine cucumbers and salt in a bowl stir well and let stand for 60 minutes drain, rinse, and drain well transfer to a clean bowl combine onions, yogurt, lemon juice, dill, and spinach in a food processor process to blend well transfer to a bowl whisk in olive oil season to taste with salt, pepper, and cayenne add cucumbers and let stand for 45 minutes adjust seasonings as necessary serve chilled
