Ingredients:


4 ounces sliced mushrooms

1 ounce unsalted butter

1 teaspoon fresh lemon juice

4 quarts veloute sauce
 

Preparation / Directions:


saute mushrooms in butter, adding lemon juice to keep them white add to white wine sauce, supreme sauce, veloutte sauce, or allemande sauce do not strain keep warm serve warm
