Plum Tomato Sauce

Ingredients:


1 pound plum tomato

2 teaspoons unsalted butter

1 teaspoon olive oil

1 cup onion

1 piece bay leaf

1 teaspoon fresh oregano

1 teaspoon kosher salt

1 teaspoon black pepper

1 teaspoon fresh basil leaves
 

Preparation / Directions:


remove cores from tomatoes, mince finely heat 1 tablespoon butter in a skillet, over a medium flame add the onions, heat and stir for 6-8 minutes, just until it begins to color add the tomatoes, bay, and oregano bring to a boil, reduce heat, and simmer for 15 minutes remove and discard bay leaf transfer to a food processor process to a smooth puree return to the skillet season to taste with salt and pepper place over a low flame until heated through swirl in butter to finish garnish with minced basil serve hot, over pasta
