Filet Of Beef With Oysters, Oyster Cream And Mushrooms

Ingredients:


--- OYSTER CREAM ---

1 tablespoon butter -- no substitutions

1 teaspoon shallot -- minced

1/2 teaspoon garlic -- minced

2 tablespoons country or westphalian ham -- minced

2 medium fresh oysters -- (shucked), with their liquor

1 tablespoon white wine

1 cup heavy or whipping cream

1/8 teaspoon curry powder

1 tablespoon cold butter -- cut up

1 dash salt

1 dash freshly ground pepper

--- MUSHROOMS ---

2 tablespoons butter -- no substitutions

1 tablespoon minced shallots

1 dash minced garlic

1 cup oyster mushrooms

1 dash salt

1 dash freshly ground pepper

2 fillets filets mignons -- 6 oz. each

1 teaspoon vegetable oil

1 dash salt

1 dash freshly ground pepper

8 medium oysters -- shucked

2 slices bread slices -- cut into heart shapes -- toasted

1 tablespoon country or westphalian ham -- cut into thin strips

1 tablespoons snipped chives -- for garnish

1 package steamed french green beans and baby carrots
 

Preparation / Directions:


1. Make Oyster Cream: Melt butter in medium saucepan over low heat. Add shallot, garlic and ham; cook 6 to 8 minutes. Add oysters with their liquor and wine; cook until almost all liquid is evaporated. Add cream and curry powder; increase heat to medium. Bring to boil; boil until reduced to 1/2 cup. Whisk in cold butter, salt and pepper. Makes 1/2 cup. 2. Make mushrooms: Meanwhile, melt butter in medium skillet. Add shallots and garlic; cook 30 seconds. Add mushrooms and cook, stirring, until tender, 5 minutes. Season with salt and pepper. Keep warm. 3. Meanwhile, heat broiler. Rub filets with oil; sprinkle with salt and pepper. Broil 4 inches from heat source, 4 to 5 minutes per side for medium-rare. 4. Spoon 1/2 teaspoon Oyster Cream on each oyster and broil 1 minute. To serve, place filets on toast on 2 heated dinner plates. Arrange oysters around beef. Spoon 2 tablespoons Oyster Cream on each filet and top with ham. Spoon remaining sauce onto plates. Sprinkle with chives. Serve with steamed green beans and baby carrots.
