Preparation / Directions:Combine mustard, paprika, cayenne, salt, lemon juice, and vinegar in a food processor with machine running, add peanut and olive oils in a thin-steady stream process until thickened stir in scallions, onions, celery, parsley, and tarragon, set aside heat water to a boil in a stockpot, over a high flame add shrimp, return to a boil, reduce heat, and simmer for 3 minutes drain well add drained shrimp to thickened sauce mixture-mix well cover and chill for 4-48 hours skewer shrimp with frilled toothpicks serve chilled or at room temperature, in prepared sauce
