Scampi Al Prosciutto Di Parma

Ingredients:


1 1/2 pounds medium shrimp

1/4 pound prosciutto -- thinly sliced

1/4 cup olive oil mixed with

1 medium lemon -- juiced

1/2 cup dry unflavored breadcrumbs -- mixed with

2 tablespoons parsley

6 slices lemon wedges
 

Preparation / Directions:


Preheat grill or broiler. Shell and devein shrimp. Cut prosciutto into - -inch" wide and 1 1/2-inches long strips. Roll prosciutto around shrimp. Thread wrapped shrimp onto 4 long metal skewers. Brush with olive oil mixture and sprinkle lightly with breadcrumb mixture. Place over hot grill or under broiler and cook 1 1/2 minutes or until golden. Turn skewers over and cook other side 1 1/2 minutes or until golden. Serve hot with lemon wedges.
