Shrimp and Rice Salad |

Ingredients:
3 cups cooked rice -- chilled |
1 package frozen cooked shrimp (6 or 10 oz) -- thawed |
1 1/2 cups diced celery |
2 medium green onions -- chopped |
1 can sliced water chestnuts (8 oz.) -- drained |
1/2 cup mayonnaise |
2 teaspoons soy sauce |
1 bunch Lettuce leaves |

Preparation / Directions:
Combine all ingredients except lettuce leaves, mixing well; chill 2 hours. Serve on lettuce leaves.
