Shrimp In Champagne Sauce

Ingredients:


1 pound extra large shrimp (shelled and deveined)

1/2 pound fresh green veggie (asparagus tips -- snowpeas)

1/4 pound fresh mushrooms -- sliced

1 tablespoons butter

2 tablespoons olive oil

1/2 Cup finely chopped onions

1 1/2 Cups whipping cream

3/4 Cup sparkling grape wine -- (non-alcoholic)

1/2 teaspoon dried thyme

8 ounces cooked angel-hair pasta
 

Preparation / Directions:


Melt butter with oil in heavy skillet over med hi heat. add shrimp and mushrooms, saute` for 1 minute. sprinkle with salt and pepper. cook till shrimp just turn pink, transfer to warm plate. add cream, sparkling wine and thyme to skillet. boil till the mixture is reduced to a sauce consistancy, aprox 5 mins. retirn shrimp and veggies to skillet. stir till heated through. pour over cooked angel-hair pasta ((((this was not easy to remember what i did)))))) but it sure is a great dish to serve company.
