Preparation / Directions:Coat 4 individual gratin dishes with cooking spray. Divide shrimp evenly among dishes; set aside.
Combine the breadcrumbs, parsley, lemon rind, salt, and garlic in a bowl; stir in lemon juice and oil. Sprinkle the breadcrumb mixture evenly over shrimp.
Place dishes on a baking sheet. Bake at 400F for 13 minutes or until shrimp are done and breadcrumbs are lightly browned. Yield: 4 servings.
