Preparation / Directions:For a year of prosperity, give a jar of Hoppin' John. The story goes that this old Southern favorite got its name from the way the children hopped about in anticipation as they waited for it to cook. And we all know that every pea that's eaten will bring a day of good luck! A meal in itself, the traditional dish combines black-eyed peas and rice with bacon, onion, bell pepper, and tomatoes. To add to the celebration, tuck the jar in a paper hat brimming with party favors.

Cover the peas with water, allow to soak several hours or overnight. Drain peas. In a large saucepan, combine peas with 4 cups water and salt. Simmer over medium-low heat 1 hour, or until peas are tender.
Saute bacon, onion, and bell pepper until bacon is crispy; do not drain. In a 2-quart saucepan, combine peas, reserved liquid, the sauteed mixture, rice, pepper, parsley and tomatoes. Cover and simmer 1 hour, or until liquid is absorbed and rice is thoroughly cooked. Makes 9
