Broccoli Souffle 1

Ingredients:


20 ounces frozen broccoli

3 large eggs

1 teaspoon salt and pepper to taste

1 tablespoons onion soup mix

1/2 cup mayonaise

1 tablespoons grease for the pan

2 tablespoons matzah meal -- divided
 

Preparation / Directions:


Cook the broccoli according to package directions. Drain thoroughly. Set aside. In a mixing bowl, beat the eggs very well with the salt, pepper and onion soup mix; ass the mayonaise and contiinue beating until well blended. Stir in the cooked broccoli. Grease a 7 x11 1/2" baking pan. Dust lightly with 1 Tbls of the matzah meal. Pour broccoli in the pan and sprinkle the top with remaining matzah meal. Bake at 350 for 40-50 minutes, or until the top is golden.
