Cheddar Souffle

Ingredients:


3 tablespoons flour

2 tablespoons unsalted butter

1 cup milk

1 teaspoon salt

1/8 teaspoon cayenne

1/2 cup cheddar cheese

4 large egg yolk

4 large egg white
 

Preparation / Directions:


1. Heat butter in the top of a double-boiler, over a moderate flame stir in flour with a wooden spoon, until well blended add milk, heat and stir until smooth and slightly thickened.

2. Add salt, cayenne, and cheese heat and stir until cheese melts remove from heat, stir until cooled.

3. Stir yolks into cooled cheese mixture, then gently fold in whites pour into a greased souffle pan run your thumb around the inside of the top rim to clean

4. Bake at 375 degrees for 30-35 minutes remove from oven serve at once.
