Beef Stew Or Soup

Ingredients:


1 pound stew meat (cut into bite size pieces)

1 can v-8 juice

1 medium Onions cut up -- (up to 2)

3 medium carrots cut up -- (up to 4)

3 medium potatos cut up -- (up to 4)

2 medium ribs celery cut up -- (up to 3)

1 cup frozen corn

1 cup frozen peas

1 cup frozen green beans

1 tablespoon cooking oil -- (up to 2)
 

Preparation / Directions:


Brown stew meat in the oil and remove to crockpot. Add vegatable juice and fresh veggies cut into bite size pieces. Cook on low 8 hours or 5 hours on high. Add frozen veggies last 1-2 hours. You can add as many veggies as you like. I add more potatos because my husband like them and less carrots because he won't eat them. Thicken with cornstarch before serving, or serve as beef soup
