Preparation / Directions:
Pierce carton of spinach. Place in microwave oven. Microwave at high (100%)
7 minutes. Carefully open carton and drain. Stir in salt, pepper and minced onion.
Place spinach in a 1 1/2 quart casserole. Place sliced eggs over spinach.
Set aside.
Place butter in a small bowl. Microwave at high (100%) until melted, 30 to
45 seconds. Stir in flour, salt, pepper and dry mustard. Blend in milk and
Worcestershire sauce. Microwave at medium high (70%) until thickened, 4 to
5 minutes, stirring twice during cooking time. Stir in cheese.
Pour sauce over eggs and spinach. Sprinkle bread crumbs on top. Cover with
wax paper. Microwave at medium high (70%) until heated through, 4 to 5
minutes.
Makes 6 servings.
