Orzo With Spinach And Feta Cheese

Ingredients:


1 cup orzo pasta

1 1/4 teaspoons olive oil

3/4 medium onion -- minced

7 ounces frozen chopped spinach -- thawed and well drained

2 tablespoons feta cheese -- plus 2 tsp.,crumbled

1 teaspoon freshly ground black pepper -- to taste
 

Preparation / Directions:


Cook the orzo according to package directions. Drain. Heat the oil in a skillet over medium high heat. Add the onion and saut‚ for 5 minutes. Add the spinach and saut‚ for 4 more minutes. Toss the onion spinach mixture with the hot orzo. Add the feta cheese and ground pepper and toss well. Serve immediately. NOTES : Prep: 10 min, Cook: 10 min.
