Spinach Pie with Prosciutto and Parmesan

Ingredients:


2 pounds spinach blanched squeezed dry chopped

1 large onion -- diced fine

7 ounces pancetta = italian bacon -- diced fine

3 ounces prosciutto -- diced fine

3/4 cup parmesan cheese
 

Preparation / Directions:


Saute onion and pancetta together until golden brown. Mix all of above together except prosciutto. Sprinkle prosciutto on top after putting in prepared pie crust. Bake at 350 degrees for 1 hour.
