Squash-corn Casserole

Ingredients:


3 Medium Or 4 zucchini (or yellow summer squash) sliced

1 cup Whole kernel corn

1/3 medium Onion -- chopped

1 medium jalapeno pepper -- seeded and chopped

1 teaspoon salt to taste
 

Preparation / Directions:


Mix above ingredients and cook (or steam) until tender. Drain and top=20 with: 3/4 cup grated cheddar or Monterey Jack cheese. Bake about 10=20 minutes at 350 .
