Irish Potato Stew

Ingredients:


5 medium potatoes -- peeled, coarely chop, up to 6

1 small onion

1 cup roux

2 slices bacon -- chopped, up to 3

1 teaspoon salt and pepper -- to taste

1 Cup boiling water
 

Preparation / Directions:


Peel potatoes and cut coarsley. Make a roux. Brown one onion in roux. Add chopped bacon, if desired. Add potatoes and let smother for about 5 minu tes. Add boiling water, salt and pepper to taste and let cook until potat oes are done.
