Pineapple Noodle Salad or Kanom Jean Sound Nam

Ingredients:


1/2 pound shrimp -- shelled and cleaned

1/2 pound somen noodles

1/4 cup crushed pineapple

5 cloves garlic -- peeled and chopped

2 tablespoons ginger root -- slivered

----Thai Dipping sauce

4 stalks green onions -- cut into florets

1 can coconut milk, mae ploy brand
 

Preparation / Directions:


Cook shrimp in coconut milk without stirring. Boil noodles 3 minutes. Rinse noodles in cold water and drain. (If noodles are to sit awhile, leave them sitting in water or they clump.) Arrange pineapple and all other ingredients along with noodles on platter. Top with shrimp mixture. Prepare dressing and pour over noodles. Garnish with peppers. Or prepare in this order. Noodles, ginger, garlic, pineapple, sugar, shrimp mixture, sauce, red pepper and more sauce. Cut onions into 1" pieces and cut into flowers and garnish.
