Carne Guisada Con Papas

Ingredients:


2 pounds pork -- up to 3 pounds

1 medium Onions

1 can tomato puree

1 cup chicken stock or water

3 medium potatoes

2 cloves garlic

1/8 teaspoon chile powder

1/8 teaspoon cumin

1/8 teaspoon salt

2 tablespoon oil
 

Preparation / Directions:


In a large heavy pan or dutch oven, heat oil then add pork. once lightly brown add onions and sauté. Add potatoes, and saute some then add chicken stock, tomato puree, garlic, and everything else to taste (heavy on the cumin, lighter on the chile powder is a good combo) Cook until very tender. Sauce will thicken
