Tofu Mayonnaise

Ingredients:


15 ounces soft tofu

6 tablespoons yogurt -- plain, nonfat

3 tablespoons vinegar

2 teaspoons dijon mustard

1 clove garlic

1 teaspoon granulated sugar

1/2 teaspoon salt

2 tablespoons vegetable oil
 

Preparation / Directions:


Use whenever regular mayonnaise is called for. In food processor, combine all ingredients except for oil until smooth. with motor running, slowly drizzle oil through feed tube until mixture is creamy. Refrigerate in covered container. Mixture thickens when chilled.
