Fried Tomato Pones

Ingredients:


2 cups Green or Ripe tomatoes, Peeled -- seeded, and diced

1 teaspoon salt

1 teaspoon pepper

1 cup Cornmeal

1 cup Bacon drippings or corn oil -- for frying
 

Preparation / Directions:


Place tomatoes in a mixing bowl. Season with salt and pepper. Combine tomatoes with cornmeal and form with hands into 8 pones, or patties. Heat bacon drippings in a large skillet, over med-high heat. Fry pones for 2-3 minutes on each side until golden. NOTE: a nice variation on this recipe is to combine tomato mixture with 1/4 cup thinly sliced green onions before forming into cakes and frying.
