Tasty Tuna Salad

Ingredients:


1 can white albacore tuna in water - -- (12 oz), drained and flaked

1 can water chestnuts - -- (8 oz), drained and chopped

2 medium scallions -- sliced

1 small carrot -- peeled and grated

1/2 cup fat-free mayonnaise

1/4 cup sweet pickle relish

1 teaspoon Dijon mustard

1/4 teaspoon salt

1/8 teaspoon freshly-ground black pepper
 

Preparation / Directions:


In a medium bowl, mix the tuna, water chestnuts, scallions, carrots, mayonnaise, relish, mustard, salt, and pepper. In a flash: Buy carrots that are already grated or shredded and scallions that are chopped in the salad-bar section of the market. Also, if serving as a salad, buy a package of ready to serve greens. Spin off: Leftovers can be added to scrambled eggs and omelets.
