Grilled Tuna Burger With Spicy Mango Ketchup

Ingredients:


2 pounds minced fresh tuna

2 tablespoons whole grain mustard

2 tablespoons capers -- minced

1/4 cup cilantro -- minced

1/4 cup scallions -- minced

1 tablespoon chipotle puree

1 recipe Spicy Mango Ketchup -- (recipe follows)
 

Preparation / Directions:


Prepare a wood or charcoal fire and let it burn down to embers. In a large mixing bowl, combine all ingredients and season to taste with salt and pepper. Refrigerate until ready to use. When ready to use, form into 1 inch thick patties. Brush tuna burgers with olive oil and season with salt and pepper. Grill for 1 minute on each side for rare. Serve on hamburger roll with Spicy Mango Ketchup.
