Corn-Zucchini Bake

Ingredients:


1 pound zucchini

1 tablespoon margarine

1 package frozen corn -- cooked or

1 can corn

1/4 cup bread crumbs

1 tablespoon melted butter -- or margarine

1/4 cup chopped onion

2 large eggs -- beaten

1 cup shredded swiss cheese

1/4 teaspoon salt

2 tablespoons grated parmesan cheese
 

Preparation / Directions:


Preheat oven to 350 degrees. Cook zucchini. Mash. Cook onion in butter. Combine beaten eggs, zucchini, onion, corn, Swiss cheese, salt. Pour into 1 quart baking dish. Combine bread crumbs, Parmesan, melted margarine and add on top. Bake for 40 minutes. (If using 7x7x1 1/2 dish, bake for 25-30 minutes.)
