Tomato And Zucchini Casserole

Ingredients:


1 Medium suzzhini chopped

1 Medium onion chopped

1/4 Clove garlic chopped

1 Can tomatoes cut in small pieces

1 Teaspoon salt

1 Teaspoon oregano or italian seasoning

1 Teaspoon pepper to taste

1 Package grated mozzarella cheese

1/2 Cup grated parmesan cheese

1 Teaspoon wine vinegar

3 Tablespoons sugar...optional...
 

Preparation / Directions:


Saute onion and garlic in skillet. Add zucchini, tomatoes, seasonings and vinegar. Heat to boiling; reduce heat and simmer for 10 minutes. Pour mixture into greased baking dish. Bake at 400 degrees for 45 minutes, then stir in mozzarella cheese and top with parmesan cheese. Bake 10 minutes longer.
