Preparation / Directions:In medium skillet, heat oil; add onion and cook over medium-high heat
until tender. Add remaining ingredients except cheese. ring to a boil
over medium-high heat; reduce heat to low and simmer, uncovered, 5-10
minutes. Place zucchini mixture in 8-inch square baking dish and top
with cheese. Bake uncovered, in 375 degree oven 10 minutes or until
cheese melts.
Serving Suggestion: Serve as a side dish with other Mexican
speciaities.
