Zucchini Lasagna

It's another recipe to use for all those zucchini!
 

Ingredients:


1 pound ground beef

1/2 medium onion (diced)

2 medium zucchini (cut in bite size pieces)

4 ounces sliced mushrooms

15 ounces seasoned tomato sauce

8 ounces shredded mozzarella cheese
 

Preparation / Directions:


Saute together in large skillet ground beef, diced onion and zucchini. When zucchini is tender and ground beef is brown drain well. Return to medium heat and add mushrooms, and seasoned tomato sauce. When heated through sprinkle shredded mozzarella cheese on top and cover. When cheese is melted serve. I make this with fat free cheese and lean gound beef.
